On top of being 20 weeks pregnant and four of the five of us taking our turn with the stomach bug flu thing going around, that has left me, well, pretty much wiped out. Drained. Fried ( sorry for the bad pun)...
So fried I haven't gone to the store or had a meal plan in forever. So fried we had pancakes for dinner on Sunday, and cereal for dinner last week sometime. My freezer has never been so bare, but that's a good feeling in a way. I found a few russets left in the fridge drawer and some frozen chicken legs and thighs dated from last year, so today, while the kids played on the porch with the open door and a cool breeze coming in, I fried food for an hour. Threw in an onion's worth of rings just for me, too. Evan loves fried chicken, and ate two legs (he's back to health after his sick bout and eating again!) but Luke apparently was not pleased that my version did not taste just like Chick-fil-a, and had bones. Sorry kid!
Kelly had no complaints. Pretty much anything that you can dip in ketchup makes this little chica quite happy. When the fries are all done she dips her finger in too.
Homemade fries are quite something! What they are NOT is fast =; ) But it was nice to slow down and enjoy the sounds of kids on the porch (thank you God for springtime!!), Kelly playing/eating happily while I fried stuff (both of which are not normal around here), and just being thankful of how good such simple food and some decent weather can be.
